Food glorious food!

As we see with trends in fashion, music, and technology, people want to be in the know and try what’s new. Food is no different: while we all like our traditional go-to favorites, trying out new food trends is a simple way to tap into our adventurous side.

Where do trends come from? Everywhere!

Shrinking Boundaries: As the world becomes smaller through social media, we’re exposed to more people and different cuisines. Sriracha used to be found in only Asian cooking and restaurants, and now is a hot flavoring at many fast food restaurants.  

Cultural Shifts: The craving for authentic, artisanal experiences has led to the evolution of the food truck. As people want more natural, fresh foods or to support a community, farm to table has become an important trend.

Old Dog, New Trick: Trends can come from an innovator taking a common item and preparing it in a new way. Starbucks elevated coffees to trendy yet mainstream, and chains such as McDonald’s and Dunkin Donuts introduced their versions of upscale coffees. Now we have a new coffee trend with cold brew’s popularity.

Pop culture: Trends can come from top food magazines, television, and books. Chia seed popularity can be traced to the book “Born to Run,” about a Mexican tribe of super-runners who eat chia. The running community and other health-conscious groups took note, and now chia is a sought-after ingredient.

Healthy… but not too healthy: A desire for being health-conscious has driven many food trends, and a need for food products for people with food sensitivities and allergies has spurred a trend for gluten-free items and non-dairy milks. But health-conscious eating does not preclude enjoying delicious sweets. For instance, light ice cream and super-premium ice cream still exist side-by-side in the supermarket.

Making the most of food trends

Whether you’re serving your employees, your customers, or your guests, don’t be afraid to branch out from your traditional menu and offer something new, whether that’s simply offering almond milk as an option or crafting entirely new locally sourced entrées.
